Directions:
Cook saffron cream sauce
- Take a large fry pan, add virgin olive oil, and put over medium heat.
- Add chopped onion and garlic to hot oil. Stir continuously and evenly sautés.
- Add all-purpose flour after 3-4 minutes when the onions are nicely translucent. Mix continuously for about 1-2 minutes.
- Add milk and chicken broth to the pan and mix well.
- After mixing, add saffron threads and gently mix for 3-4 minutes until it becomes a creamy sauce. After about 4 minutes, you will achieve a creamy saffron sauce.
- Season the sauce with salt and freshly cracked black peppers.
Don’t turn off the flame. Turn the stove flame to lower the heat and mix occasionally (until pasta is added).
Boil the pasta: I used spaghetti to cook this pasta, but any pasta type goes well. Take a water stock pot, add a generous amount of sea salt, and put it over a heated flame. Once the water is boiled, it’s time to add pasta and let it cook. About after 10 minutes, you can get perfectly cooked al dente pasta.

- Transfer cooked pasta directly to the saffron creamy sauce. Worry not if the little pasta water gets into the sauce. It will help to maintain a creamy texture.
- Turn off the flame and give a mix until everything mixes well together.
